The one I practice is very similar: I like to attack the throat instead of the face, and if possible I try to grab my own right arm with my left (much like I do in the kata). So its a variation on the idea you express in your video, while the principles are the same. The elbow to the throat you put in there is a sweet treat for the opponent. :)
Attacking the throat is definitely an option. I considered grabbing my own arm, however I find that I become to "fixed", it inhibits the fluidity of my movement.
At my seminar (see what's on ) I will consider the potential of the opponent grabbing and removing the hand that grabs his face (or throat) before I'm able to conclude the sequence.
As I mention on the clip the version I practice is slightly different from Shotokan Bassai Dai. My version has the seizing motion I use in the video as a Morote Shotai Uchi, followed by Kake Uke, which precedes the kick & left Shuto.
So as the opponent removes my hand I release the lock to use Kake Uke to break his wrist grab, which sets me up on the outside of the combative engagement, set up nicely for the stamp kick - which sets up for LEFT Shuto Uke!!! This is significant as kata usually sets up for the dominant right side, but not on this occasion - which when I began my study of Passai years ago encouraged me to ask myself why!?
Perhaps I'll record that, although I don't want to put too much out there BEFORE the seminar. :-)
